Staffing Tier Program

The Server Tier Training Program has been established to build a strong, knowledgeable team of servers as well as provide equal opportunity for advancement and additional compensation. There are 6 tiers to the program, tier 6 for new hires to tier 1 being Senior Captain.

As you advance through the tiers, you will be compensated at the rate associated with that tier. As with any forward advancing program, if your performance does not meet or exceed your tier level, additional training may be necessary. To obtain this additional training, you may be required to drop a level until such time that you pass the level again. Your compensation will be adjusted accordingly. Current employees will be moved to their current level automatically.

Each tier is broken into sections:

  • Tier 6 New Server/Trainee, A and B — ($10.00/Hour + Bonus)
  • Tier 5 Established Server, A, B and C — ($10.50/Hour + Bonus)
  • Tier 4 Pre-Captain, A and B — ($11.00/Hour + Bonus)
  • Tier 3 New Captain — ($12.00/Hour + Bonus)
  • Tier 2 Established Captain — ($12.50/Hour + Bonus)
  • Tier 1 Senior Captain — ($13.00/Hour + Bonus)

All trainings are approximately 2 hour long sessions of progressive teachings meant to provide Cuisine servers with the tools to develop their customer service, technical and business skills. In addition to attending the trainings, servers are required to work a minimum number of events as well as pass a written and practical demonstration test. The curriculum for the Server Tier Training Program is as follows:

Tier 6 New Server/Trainee ($10.00/Hour + Bonus)

Tier 6A Training

o   Organizational Introduction

o   Chain of Command

o   Essential Policy & Procedure Review

o   Introduction to Formal Service and Demonstration

o   How to Load a Cork Tray

o   How to Tie a Tie

o   How to Ice and Water Glasses

o   Introduction to Linens and Demonstration

o   Learn How to Box a Table

o   Learn How to Cover a Tray Jack, Cover a Cork Tray

o   Learn How to Wrap a Garbage Can

o   Tour of Warehouse

 

Tier 6B Training

o   Tour of Warehouse Review

o   Catering Server and Bartender Job Description

o   Bonus Structure

o   Late Policy, Guest Count Policy and Release of Liability Form

o   On the Job Injury Procedure

o   Tier Program Explanation

o   Butler Passing and Demonstration

o   Review of Linens

o   Introduction of Crates (Kitchen, Chef, Bar and Emergency)

  • NOTE* – A new server/trainee must complete 3 things to advance to Tier 5

o   Attend at least two Tier 6 Trainings A and B

o   Pass the written Tier 6 test and perform the practical demonstration test

o   Must have worked at least 8 events

 

Tier 5 Established Server ($10.50/Hour + Bonus)

Tier 5A Training

o   Chain of Command Review

o   Tier Program Review

o   Linen Sizes and Uses Review

o   Basic Buffet Design

o   Boxing a Table Review

o   Order of Menu Items on a Buffet

o   Buffet Set-up and Demonstration

Tier 5B Training

o   Bar Set-up

o   Formal Service, Setting Tables and Serving

o   Coffee/Tea Formal Service

o   Formal Service Run-Through Demonstration

o   How to Properly Load a Tray

 Tier 5C Training

o   Introduction to Kitchen Coordinator

o   Back of House Organization and Scullery Set-up

o   Loading of a Truck and Van

o   Cake Cutting Demonstration

NOTE* – An established server must complete 3 things to advance to Tier 4

o   Attend at least three Tier 5 Trainings A, B and C

o   Pass the written Tier 5 test and perform the practical demonstration test

o   Must have worked at least 16 events

 

Tier 4 Pre Captain ($11.00/Hour + Bonus)

o   Elaborate Buffet Setup

Tier 4B Training

o   Load out process – Getting “Checked Off”

o   Processing Alcohol: Pre-Event and Post-Event

o   Dissecting the Captain’s Sheets

o   Special Event Master Change Sheet Explanation

o   How to Layout a Room for an Event

o   Timelines

o   Difficult Situations

o   Safety

o   Property Damage

o   Upset Clients

o   On-The-Job Employee Injury Review

NOTE* A pre captain must complete three things to advance to Tier 3 New Captain

o   Attend at least two Tier 4 Trainings A and B

o   Pass the written Tier 4 test and perform the practical demonstration test

o   Must have worked at least 28 events

 

Tier 3 New Captain ($12.00/Hour + Bonus)

NOTE* A new captain must have worked at least 50 events to advance to Tier 2 Established Captain.

  • In addition to 50 events, event details must include
    • Shadowing an established or senior captain for 10 events
    • Must have captained at least 8 formal served events
    • Must have captained at least 1 event over 300 people
    • Must have captained at least 5 events over 100 people

 Tier 2 Established Captain ($12.50/Hour + Bonus)

NOTE* An established captain may only advance to a Tier 1 Senior Captain by approval by Administrative Committee!

 

Tier 1 Senior Captain ($13.00/Hour + Bonus)
